Honey Whiskey Peach cobbler

So people have been asking for a dessert recipe from me for a while so here it goes.
My Husband wanted something sweet after dinner. So here I am at around 9pm making cobbler :)

Ingredients needed
Peaches (depending on size of cobbler) I used 4 smaller jars of drained peaches ( You can also use fresh however you will need more sugar and honey. :)
1/2 c Honey
1/2 c Sugar ( I prefer brown but you can use white or brown)
1/2 c shredded coconut (You don't have to add this but I like it :)  )
1 tsp cinnamon
1/4 tsp ground cayenne pepper
1/2 tsp salt
1 tsp vanilla extract
3/4 c Honey Whiskey ( I used Jack Daniels Tennessee Honey)
3 Tbs cornstarch
1/4 c cold water
3 Tbs unsalted butter
3 Tbs cream or milk
1 1/2 c quick oats
1/2 c chopped walnuts (optional) (I only put on about 2/3 of mine cause not everyone likes them)

1 pie crust (either home made or store bought) This will be used as a bottom crust and cooked in a glass dish until golden brown. When you remove from oven use 1/4 c Honey Whiskey and a pastry brush and brush onto crust. Set aside

In a sauce pan on medium high add peaches, 1/4 c sugar, honey, coconut, cinnamon, cayenne, salt, butter, milk and vanilla. Bring to a low simmer. Cook for about 20 minutes or until peaches begin to break down but still hold their shape. Add 1/2 c Honey Whiskey and let simmer 15 minutes. In a small bowl combine water with cornstarch to make a slurry. Stir into peach mixture. Let cook another 5 minutes until peaches become thick. Pour onto crust in dish. Sprinkle oats evenly over the top of the peaches. Then sprinkle the sugar and walnuts evenly over the oats. Bake for 20 minutes at 400 degrees. Remove and let set for at least 1 hour before digging in to let the filling set.
